Hummus

Serves approximately 4 - 5 people

Drain one 14 oz can of garbanzo beans, reserve liquid.

Add the following to food processor:

  • Beans

  • ¼ cup good olive oil

  • 3 garlic cloves grated

  • 1 tbs cumin powder plus more to taste

  • 2/3 cup tahini, well mixed into oil (preferred brand below)

  • Salt and pepper to taste

  • Juice of 1 fresh lemon or a bit more to taste.

  1. Blend in food processor, adding reserve bean liquid as needed (often use most of reserve liquid)

  2. Serve with pita bread grilled in hot black steel or cast iron pan with plenty of butter.

  3. Add good quality olive oil to hummus with toasted pine nuts and chopped parsley.


Preferred Tahini



Derived from Al. The key is more garlic, reserving and incorporating the liquid, and more cumin than traditional recipes. It's a nice treat mid day or when dinner plans are undetermined and you find yourself scrambling for a snack.
