Brown Sugar Cinnamon Coffee Cake

Cake

  • 1 box yellow cake mix (Duncan Hines)

  • 1 small box instant vanilla pudding

  • 4 eggs

  • 1 C. sour cream

  • 1/2 C. oil

  • 1/2 cup milk



Topping & Filling

  • 3/4 C. brown sugar

  • 2 tsp cinnamon (Preferably Vietnamese Cinnamon from Steel City Salt Co.)

  • 1 C. pecans (optional)

  1. Preheat oven to 325 if using a Pyrex. If using a metal pan, preheat oven to 350.

  2. Mix the cake batter ingredients. Mix 1/2 the batter in a 9 x 13 glass or metal pan.

  3. Sprinkle on 1/2 of the topping mixture.

  4. Add the remaining batter, and sprinkle with the remaining topping mix.

  5. Bake for 45 min to an hour.
