Ma's Spinach Salad
1 bag of spinach
6 pieces of bacon, cooked crispy and crumbled
1/2 C. cashews
4 hard boiled eggs, chopped
Dressing
1/3 C. vinegar
2/3 C. oil (Ma uses canola)
1/2 C. sugar
1 tsp celery seed
1 tsp dry mustard
1 tsp salt
Mix spinach, cashews, eggs and bacon. Eggs and bacon both at room temperature to avoid wilting the spinach leaves.
Mix the dressing ingredients well, and add to the salad right before serving.
