Chicago Italian Beef

Low: 10 - 12 hours or

High: 5 - 6 hours

  • 3 - 4 pound chuck or similar roast

  • Canola Oil

  • Italian Sausages, optional (a combo sandwich with sausage and beef is a winner)

  • Brat or hefty sausage buns designed to absorb the juices

  • Provolone or Mozzarella slices

Seasoning Rub

  • 2 T Italian Seasoning

  • 2 tsp basil

  • 2 tsp oregano

  • 1 tsp sea salt

  • 1/2 tsp ground black pepper

  • 1/4 tsp red pepper flakes

  • pinch of fennel seeds

  • pinch of paprika

  • 1/2 tsp garlic powder

  • 1/4 tsp onion powder

Italian Beef Juice

  • 8 garlic cloves, grated

  • 1 onion, coarsely chopped

  • 1 - 2 large green/red bell pepper, cleaned, seeds removed, and chopped

  • 1/2 C. hot pepper Giardiniera

  • 1/2 C. pepperoncini, sliced

  • 1 T. Worcestershire sauce

  • 1 T. Kitchen Bouquet

  • 2 T. corn starch

  • 1/2 C. dry white wine

  • 8 C. beef stock

  • 2 C. diced tomatoes (28 oz can)

  • 2 tsp basil

  • 2 tsp oregano

  • 1/2 tsp fennel

  • 1/2 tsp sea salt

  • 1/4 tsp black pepper

  • 1/2 tsp red pepper flakes

  • 2 tsp paprika

  • 1/2 tsp garlic powder

  • 1/4 tsp onion powder

  1. Cover base of pan with canola oil, brown the roast on each side, and set aside.

  2. If using sausages, lightly brown, and set aside. Discard oil.

  3. Let the roast cool and thoroughly apply the rub on all sides.

  4. Grate the garlic, chop the onions, and peppers, and set aside.

  5. Mix the basil, oregano, fennel, salt, pepper, red pepper flakes, paprika, garlic powder, onion powder. Apply to the roast thoroughly on all sides.

  6. Heat oil, saute the onions and peppers for 2-3 minutes, then add the garlic for a minute or until fragrant. Add the bowl of additional herbs and spices, and saute for 1 to 2 minutes.

  7. Add remaining ingredients and bring to a simmer.

  8. Place the seasoned roast and sausages in a crock pot or Dutch oven. Add the juices that have begun to simmer.

  9. Low: 10 - 12 hours or High: 5 - 6 hours. Dutch Oven at 200-225 degrees in the oven, or crock pot set to low.
