Caesar Dressing
Yields approx. 4 c. dressing
10 cloves garlic (feel free to use more)
3 Tbsp. Worcestershire Sauce
6-7 flat anchovies
Juice of 2 lemons
1-1/2 tsp. salt
1 c. grated Parmesan
30 oz. container of Hellman’s mayonnaise
Blend first 5 ingredients in food processor. Pour into large bowl and blend well with mayonnaise and grated Parmesan. Put in covered glass container – will be good for 1-2 months in cold refrigerator.
Here’s the story…
Early on, when Al and I were back in love, we frequented an Italian restaurant near his place. We thought their Caesar dressing was the best ever. So one night, I asked the waitress if I could have the recipe. She came back with the recipe on a piece of paper which we treasured after that while making the dressing. However, a couple months later, the recipe was in one city and we were in another wanting to make the dressing. So we thought we would contact the restaurant again to ask for the recipe. We were informed, rather haughtily, that they did NOT give out the recipe – that it was a restaurant secret… We could only be grateful that a young waitress didn’t know she shouldn’t give it to us!!
