Chicken Caprese
Plenty for 2 People
1 1/2 lbs Chicken Breast
2 Roma Tomatoes, sliced
Fresh Basil, whole or coarsely chopped
Bresh Mozzarella Ball, Sliced
Balsamic Vinegar
Balsamic Vinegar Glaze
Salt and Pepper to taste
Pound the chicken to desired thickness, or leave as is depending on the size. It's essentially about your preference of chicken to tomato/cheese ratio. Should be around an inch to inch and a half. Season with salt and pepper.
Heat the chicken in a skillet with enough vinegar to surround the chicken but not drown them. Cook until chicken is browned on the edges.
Pour additional vinegar into the mix, and turn the breasts. Cover and heat until internal temperature reaches 165 degrees.
Uncover and place mozzarella slice, then top with tomato slice. Cover for an additional 2-3 minutes.
Uncover, top with basil, and drizzle balsamic glaze over your creation. Easy peezy.
